Spicy Patatas bravas (easy vegan tapas recipe)

Tapas is by far one of the most iconic culinary experiences of Spain and anyone who’s set foot in any tapas bar in Spain is likely to have come across patatas bravas. This famous Spanish tapas dish is made by combining olive oil, paprika, flour, and some broth to create a silky smooth and lightly spiced sauce that’s lovingly drizzled onto roasted or fried potatoes.
Made in around 30 minutes, our spicy patatas bravas recipe is super easy to make and vegan-friendly. This recipe makes tapas to serve 4 people.

Ingredients

  • 4 medium potatoes
  • 1 clove of garlic crushed into a paste
  • 2 cups of sunflower oil for frying the potatoes
  • 1/3 cup 80ml of extra virgin olive oil
  • 1/2 tablespoon of hot smoked paprika pimentón picante
  • 1 1/2 tablespoons of sweet smoked paprika pimentón dulce
  • ½ teaspoon of chili powder if you want it spicy
  • 1 – 2 tablespoons of plain flour add more to make the sauce thicken
  • 1 cup of vegetable broth
  • Salt to taste

Instructions
 

  • Prepare your potatoes by cutting them into small chunks and deep fry or bake them (add extra time for baking). You know they’re ready when they’re crispy on the outside and soft in the middle.
    4 medium potatoes, 2 cups of sunflower oil

  • In the meantime, prepare your sauce by heating the olive oil in a small saucepan over medium heat. Once hot, add the garlic paste and stir through.

  • Next, add the pimentón dulce and pimentón picante and stir until combined. Add the chili powder if you’re making an extra spicy sauce.
    1/2 tablespoon of hot smoked paprika, 1 1/2 tablespoons of sweet smoked paprika, ½ teaspoon of chili powder

  • Add 1 tablespoon of flour and stir until combined. Keep stirring constantly for 1 minute.

  • Reduce heat to medium-low and slowly add the broth while stirring constantly.

  • The sauce will begin to thicken as you incorporate the broth with the flour.
    Note: add more flour only if necessary to achieve the right velvety smooth consistency.
    Reduce heat to low and simmer for 5 minutes, stirring once or twice.
    Season with salt to taste.

  • To serve, drizzle sauce over some fried (or baked) potatoes. Best served with a cold beer or glass of Spanish red wine!
