This no-fuss 5-minute Spanish Tomato Salad is the perfect summer salad recipe when you’re craving flavors of the Mediterranean. Ripe juicy tomatoes are drizzled with plenty of good quality extra virgin olive oil and sprinkled with salt, ground fennel seeds, and some freshly cracked black pepper. The raw garlic adds a spicy punch and can be included or omitted to suit your taste.

- 3 ripe on-vine tomatoes
- 2 cloves of garlic
- 2 tablespoons of Extra Virgin Olive Oil
- ½ teaspoon of ground fennel seeds
- Pink Himalayan Salt to taste
- Cracked black pepper to taste
Chop tomatoes into wedges (quarters or eighths work well) and add to a plate.
3 ripe on-vine tomatoes
Peel and slice 4 cloves of garlic. Loosely cut into chunks and add to the plate.
