5oz/ 140 grams of blue cheese
1tablespoonof sherrywe used Pedro Ximénez which is sweet
1baguette or crackersfor serving
Instructions
Put your cheese into the mixing bowl and mash it with a fork until it’s fully broken apart and paste-like.

Slowly add the sherry a little at a time. Keep mashing and mixing the two together with your fork until combined (around 1 minute). Aim for a creamy consistency.

Cover the spread and leave it out at room temp for an hour or two before serving (this allows the flavors to meld and will spread easily on bread or crackers).
