Goat Cheese Pintxos with Walnuts & Honey – Easy 5-Minute Recipe

Inspired by the pintxos culture of Spain's Basque Country, each bite combines creamy goat cheese, crunchy walnuts, sweet honey and fragrant fresh basil, all piled onto a slice of crusty baguette. It's sweet, savory, creamy, crunchy and incredibly moreish.

Ingredients

  • 1 crusty baguette
  • 200 g 7 oz goat cheese log, at room temperature
  • 50 g 1.75 oz walnuts, roughly chopped or left whole
  • 2 Tbsp honey or enough for drizzling
  • A few fresh basil leaves to garnish

Instructions
 

Step 1 – Prepare the bread

  • Slice the baguette diagonally into rounds around 2.5 cm (1 inch) thick. For a warm, crunchy base, lightly toast the slices under the grill or broiler for around 1 minute, keeping a close eye on them so they don't burn.

Step 2 – Add the goat cheese

  • Spread or spoon a generous amount of soft goat cheese onto each slice of bread.

Step 3 – Finish with walnuts and honey

  • Top each pintxo with a walnut, or a few pieces of roughly chopped walnut. Drizzle generously with honey and finish with a few fresh basil leaves.

    Expert Tips

    Bring the goat cheese to room temperature: Letting the cheese sit out for a little while before assembling makes it softer, creamier and much easier to spread.
    Toast or don't toast: This recipe works beautifully either way. Toasting the bread adds extra crunch and a little warmth, while fresh bread makes these pintxos even quicker to prepare.
    Choose good honey: Since there are so few ingredients, each one makes a difference. A good-quality floral or wildflower honey works particularly well with the creamy goat cheese and earthy walnuts.
    (Almost) no cooking required: Apart from optionally toasting the bread, there's no cooking involved. Perfect for easy entertaining, last-minute guests or putting together a quick tapas spread.
    Make them just before serving: For the best texture, assemble the pintxos shortly before serving so the bread stays fresh and doesn't soften under the toppings.
