Equipment

  • Oven rack
  • small bowl
  • Wooden cutting board
  • Chef knife

Ingredients

  • A few slices of bread we used brown wholemeal bread
  • 1 small tin of Mackerel in olive oil
  • 1-2 ripe Roma tomatoes diced
  • 1 ripe avocado diced
  • ½ red onion diced fine
  • Extra virgin olive oil or use the Mackerel oil if you prefer
  • 1 tsp Jerez Sherry Vinegar
  • Salt and Pepper to taste
  • Fresh parsley for garnish

Instructions
 

Toast Bread

  • Lightly toast bread using a toaster or oven grill. For the oven grill, around 2 minutes, 45 seconds is plenty.
    A few slices of bread

Make guacamole

  • In a small bowl, add the diced red onion, avocado, and tomato.
    1-2 ripe Roma tomatoes, 1 ripe avocado, ½ red onion
  • Add the Jerez sherry vinegar and some olive oil.
    1 tsp Jerez Sherry Vinegar, Extra virgin olive oil
  • Mix well and season to taste with a little salt and pepper.
    Salt and Pepper

Load up bread with toppings and serve

  • Load up the bread with some of the guacamole, then top with a few small fillets of mackerel.
    1 small tin of Mackerel in olive oil
  • Garnish with some fresh chopped parsley, and serve!
