Ingredients
A few slices of bread
we used brown wholemeal bread
1
small tin of Mackerel in olive oil
1-2
ripe Roma tomatoes
diced
1
ripe avocado
diced
½
red onion
diced fine
Extra virgin olive oil
or use the Mackerel oil if you prefer
1
tsp
Jerez Sherry Vinegar
Salt and Pepper
to taste
Fresh parsley
for garnish
Instructions
Toast Bread
Lightly toast bread using a toaster or oven grill. For the oven grill, around 2 minutes, 45 seconds is plenty.
A few slices of bread
Make guacamole
In a small bowl, add the diced red onion, avocado, and tomato.
1-2 ripe Roma tomatoes,
1 ripe avocado,
½ red onion
Add the Jerez sherry vinegar and some olive oil.
1 tsp Jerez Sherry Vinegar,
Extra virgin olive oil
Mix well and season to taste with a little salt and pepper.
Salt and Pepper
Load up bread with toppings and serve
Load up the bread with some of the guacamole, then top with a few small fillets of mackerel.
1 small tin of Mackerel in olive oil
Garnish with some fresh chopped parsley, and serve!
