Equipment

  • 12x8 inches Ceramic Baking dish
  • Wooden cutting board
  • Chef knife
  • Cooking Tongs
  • Oven
  • Meat thermometer

Ingredients

  • 6-8 boneless skinless chicken thighs
  • 1 red onion cut into wedges
  • 2 tomatoes cut into wedges
  • 6-8 garlic cloves whole, cracked
  • 1 Tbsp Dried Oregano organic
  • 1 tsp chili flakes or Cayenne pepper
  • 1 tsp Ground Cumin
  • 1 tsp Garlic Powder
  • Extra Virgin Olive Oil
  • Sherry vinegar we used our favorite Jerez Sherry Vinegar

Instructions
 

  • Preheat oven to 200°C / 400°F
  • Cut veg into wedges and add to the dish
    1 red onion, 2 tomatoes, 6-8 garlic cloves
  • Add the chicken thighs, herbs, spices, and season to taste with some salt and pepper
    1 Tbsp Dried Oregano, 1 tsp chili flakes or Cayenne pepper, 1 tsp Ground Cumin, 1 tsp Garlic Powder, 6-8 boneless
  • Add a splash of extra virgin olive oil and a dash of vinegar.
    Extra Virgin Olive Oil, Sherry vinegar
  • Once the oven is hot, bake for 20-25 minutes
  • Use a meat thermometer to check the chicken has reached an internal temperature of 74°C / 165°F.
  • Serve!

Lazy Boy Chicken Cooking Tips: 

Make sure you turn on the oven before you start prepping, this recipe comes together fast! Be sure the oven is fully heated before adding the chicken. 
We use boneless and skinless chicken thighs for this recipe, and note they are quite small so cook quickly. Ensure the chicken is cooked by using a meat thermometer.
