17oz500g boneless chicken pieces (thighs or breast meat both work fine)
4-8clovesof garlicsliced
1medium-sized onion
4tablespoonsExtra virgin olive oil
½teaspoongarlic powder
4rosemary sprigsor around 2 tablespoons of dried rosemary
Pink Himalayan Salt and pepper for seasoningto taste
Instructions
Preheat oven to 400°F/200°C
Loosely chop the garlic and slice the onion. Add them to the pan.
4-8 cloves of garlic, 1 medium-sized onion
Trim off any fat from the chicken pieces and add to the pan.
17 oz 500g boneless chicken pieces (thighs or breast meat both work fine)
Season chicken with garlic powder, salt, and pepper. Drizzle pan ingredients with olive oil and sprinkle the leaves of two small sprigs of rosemary.
½ teaspoon garlic powder, 4 rosemary sprigs, Pink Himalayan Salt and pepper for seasoning, 4 tablespoons Extra virgin olive oil
Mix all ingredients by hand. Bake for 20-25 minutes on the middle shelf, then on the top shelf for the last 2-3 minutes for a crispy top.

Cooking notes: If you want to know if your chicken pieces are properly cooked, they will have reached 165°F/74°C internally.If using skin-on chicken thighs, you can lightly brown them in a pan with some oil for 5 minutes before roasting to give them a tasty crispy skin.
