Equipment

  • 1 deep sided baking tray or oven-safe dish
  • Sharp knife and cutting board

Ingredients

  • 17 oz 500g boneless chicken pieces (thighs or breast meat both work fine)
  • 4-8 cloves of garlic sliced
  • 1 medium-sized onion
  • 4 tablespoons Extra virgin olive oil
  • ½ teaspoon garlic powder
  • 4 rosemary sprigs or around 2 tablespoons of dried rosemary
  • Pink Himalayan Salt and pepper for seasoning to taste

Instructions
 

  • Preheat oven to 400°F/200°C
    An oven dial turned up to 180C
  • Loosely chop the garlic and slice the onion. Add them to the pan.
    4-8 cloves of garlic, 1 medium-sized onion
    Chopped garlic and onion in a small baking pan.
  • Trim off any fat from the chicken pieces and add to the pan.
    17 oz 500g boneless chicken pieces (thighs or breast meat both work fine)
    Some boneless chicken pieces are added to a baking pan with some garlic and onion.
  • Season chicken with garlic powder, salt, and pepper. Drizzle pan ingredients with olive oil and sprinkle the leaves of two small sprigs of rosemary.
    ½ teaspoon garlic powder, 4 rosemary sprigs, Pink Himalayan Salt and pepper for seasoning, 4 tablespoons Extra virgin olive oil

  • Mix all ingredients by hand. Bake for 20-25 minutes on the middle shelf, then on the top shelf for the last 2-3 minutes for a crispy top.

Notes

Cooking notes:
If you want to know if your chicken pieces are properly cooked, they will have reached 165°F/74°C internally.
If using skin-on chicken thighs, you can lightly brown them in a pan with some oil for 5 minutes before roasting to give them a tasty crispy skin.
