Tomato Burrata salad with basil and garlic dressing is a delightful Mediterranean Summer salad that requires no cooking and comes together in around 10 minutes. This salad combines plump juicy tomatoes with soft gooey burrata (soft Italian cheese made from Mozzarella and cream).
Top this salad with an easy-to-make basil and garlic salad dressing and you’ve got the perfect side dish, appetizer, or main for serving on those warm summer nights.

Equipment

  • Food processor or nutribullet
  • Large serving plate or platter (around 12 inches/30cm)

Ingredients

For the salad

  • 4 large tomatoes we used on-vine Roma tomatoes
  • 1 7 oz. 200g ball of fresh burrata (drained)
  • 2 teaspoons of capers
  • ½ red onion sliced fine
  • Salt and pepper to taste

For the salad dressing

  • 2 cloves of garlic peeled
  • 3-4 tablespoons of extra virgin olive oil
  • 1 tablespoon of white wine vinegar we used white Jerez vinegar
  • Handful of fresh basil leaves

Instructions
 

Step 1 - Prepare salad dressing

  • Add the garlic, white wine vinegar, olive oil, and basil to a food processor (or nutribullet) and buzz for 1 minute until smooth. Set aside for use later.

Step 2 - Arrange salad

  • Lay a bed of sliced tomatoes and then add some finely sliced red onion and some capers.

  • Next, remove the burrata from the brine and place it in the center of the plate. Note: Burrata is very soft and it is best to use your hands rather than a spoon that can easily break the delicate skin.

Step 3 - Dress salad and serve

  • Drizzle with basil and garlic dressing and season to taste with some salt and cracked black pepper. Serve immediately.
