Instructions
Step 1- Prep cold fillings
Remove the skin and stone from an avocado and mash the avocado with a fork. Add a pinch of salt and white pepper.

We used tinned black beans so we didn’t need to do any major prep work for those. We simply gave them a rinse, drained them, and gave them a mash.

We used store-bought pre-grated cheese, so no prep work was required.

Step 2 - Prepare hot fillings
In a small frying pan on medium-high heat, add a splash of olive oil and scramble 2 eggs per person. Once done, set the eggs aside. (NOTE: If you’re cooking bacon, sausages, or any other hot fillings, do it now and it’ll stay warm while finishing off the rest of the recipe.)

Step 3 - Assemble wrap
First, lay out a tortilla wrap in front of you, cut a small line from 6 o’clock to the center (see image attached).

Next, carefully fold starting with the bottom right quarter (the egg) and fold in an anticlockwise direction.
Step 4 - Saute wrap and serve
In a clean frying pan or skillet on medium-high heat, add a splash of olive oil and add the wrap. Cook for 2-3 minutes a side, or until you see the tortilla starts to become golden and the cheese is melted.
