Chicken with peaches and sherry is the ultimate comfort food recipe for when the cooler weather is here. This recipe combines classic Spanish flavors from sweet paprika and sweet Spanish sherry with a distinctive seasoning made with curry powder, turmeric, white pepper, and garlic.
This delicious and fragrant recipe requires one pot and can be made in as little as 30 minutes, although it’s best to let it simmer and caramelize for longer.
Topped with some fresh rosemary, parsley, and a few generous wedges of lemon and you’ve got a meal that’s great served with plenty of fresh bread for a wholehearted mop up of the caramelized peaches and onions. Or you can serve it on a bed of rice. As far as chicken recipes go, it’s really versatile because of its strong flavors so you can put it with just about any of your favorite carbs.

Cooking tips
Best chicken pieces to use
Use boneless chicken thighs or breast meat cut into ½ thick strips. Both work well, although the boneless thighs have more flavor due to the higher fat content in the meat (find more chicken thigh recipes here).
We always prefer to use free-range chicken or chicken that is antibiotic free (organic).
Fresh or tinned peaches?
For this recipe, we prefer to use canned peaches as the juice is perfect for adding to the ingredients and helps make everything caramelize.
Another advantage of using canned peaches is they are very affordable and available year-round.
Cooking with sherry
Sherry is a fantastic ingredient to add to your cooking. It is fortified wine mixed with brandy and adds a sweet flavor to recipes. It helps enhance flavors, or simply brighten recipes with additional layers of flavor.
Most sherries contain around 15-17% alcohol content, which is slightly more than a bottle of wine. Don’t worry, all of the alcohol in the sherry evaporates when cooked, leaving only the remaining flavor of the sherry.
Cooking sherry vs Pedro Ximinez sherry
There are plenty of types of sherry available and it’s good to experiment with the different flavors on offer. Cooking sherry is typically quite mild, with a sweetness that works great when added to meat dishes.
Pedro Ximinez (Pedro Ximénez) is a famous white grape variety that is grown throughout Spain, with a Denominación de Origen (DO) Montilla-Moriles located in the province of Córdoba, Andalusia. Pedro Ximinez is considered a dessert sherry that’s dark in color with an intense sweet flavor.
Pedro Ximinez is ideal for adding to meat recipes when fruit is used, as it can help sweeten the dish. Cook it down with plenty of syrup and onions and the sherry with caramelize, leaving a satisfying, rich, layering of flavors.

Instructions
Step 1 - Prepare the chicken
- Start off by seasoning your chicken pieces. Add the spices (paprika, curry powder, Turmeric, white pepper) and 1 tablespoon of the oil. Step 2 - Cook chicken
- Add the remaining oil to a pan on high heat. Once hot add the seasoned chicken pieces and cook for 4 minutes per side. Once cooked, set aside for use later.
Step 3 - Prepare onions and peaches
- In the same pan you cooked the chicken add the sliced onion and cook for 5 minutes or until the onion starts to soften.2 red onions, 14 oz 400g tinned peaches (with syrup)
- Add 1-2 tablespoons of peach syrup and mix into the onion. Season lightly with some salt.Salt and pepper
- Reduce the heat to medium and slice the peach pieces. Add them straight to the pan with the sherry and cook for 5 minutes. They should start to caramelize with the onions. Add more syrup as required, stirring occasionally.100 ml Sweet Spanish Sherry
- Add the cooked chicken pieces, a few strings of rosemary, and a pinch of salt and simmer on medium-high heat for 5 minutes or until the sauce thickens.Few sprigs of fresh rosemary
Step 4 - Serve
- Season with a little sweet paprika right before serving.Juice from 1 lemon, 1 teaspoon of sweet paprika
- Allow to cool for a few minutes before serving straight from the pan with plenty of fresh bread. Optionally, serve with white rice.Always serve with plenty of fresh lemon wedges and some fresh chopped parsley.
