How to Make Lazy Boy Chicken Thighs
Ingredients
- 6-8 boneless, skinless chicken thighs
- 1 red onion, cut into wedges
- 2 tomatoes, cut into wedges
- 6-8 garlic cloves, whole, cracked
- 1 Tbsp Dried Oregano (organic)
- 1 tsp chili flakes or Cayenne pepper
- 1 tsp Ground Cumin
- 1 tsp Garlic Powder
- Extra Virgin Olive Oil
- Sherry vinegar (we used our favorite Jerez Sherry Vinegar)

- 12×8 inches Ceramic Baking dish
- Wooden cutting board
- Chef knife
- Cooking Tongs
- Oven

Instructions
- Preheat oven to 200°C / 400°F
- Cut veg into wedges and add to the dish
- Add the chicken thighs, herbs, spices, and season to taste with some salt and pepper
- Add a splash of extra virgin olive oil and a dash of vinegar.
- Once the oven is hot, bake for 20-25 minutes
- Use a meat thermometer to check the chicken has reached an internal temperature of 74°C / 165°F.
- Serve!
