  • 2 large on-vine tomatoes, grated, skin removed
  • 1 large onion, diced fine
  • 6 cloves of garlic, peeled, minced
  • 1 tablespoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder (optional)
  • ½ teaspoon white pepper
  • 2 liters of vegetable stock (store-bought or homemade)
  • ¼ cup extra virgin olive
  • Handful of fresh parsley (for serving)
  • 1 lemon (for serving)

Equipment needed

  • Sieve and ladle (for the stock)

Method

  • Add around ¾ of the stock and cover. Simmer for 15 minutes, then add the chickpeas and simmer covered for another 5 minutes or until they soften.
  • Add the remaining stock and then the maravilla. Stir well and allow to cook covered for around 10 minutes, or until you see the maravilla has expanded in size.
  • Remove from heat and stir well. Allow to stand for a few minutes before serving.
  • Garnish with some fresh chopped parsley and a squeeze of lemon juice.

What is Maravilla?

Maravilla is a small pearl-shaped pasta that is used in soups, stews, and broths. The pearls are made with the ingredients durum wheat and semolina. Once added to liquid, they expand substantially and help to thicken recipes, and you will only need a small amount of maravilla added to any recipe to thicken.

We used just 10oz. (300g) for this recipe and that was more than enough to make a stew that serves 8 people.

One of the most popular brands of Maravilla pasta is made by the Spanish pasta brand Gallo, but if you can’t find Maravilla in your local grocery store or online, sub it with Pearl Couscous, and it’ll help to thicken your stew and add a lovely texture.

Depending on the brand, it’s usually around 4-8 minutes to get Maravilla pearl pasta to al dente if you’re boiling it. If adding it to a stew when simmering you can add longer. Check your packaging and adjust the timing to suit: Allow a little longer if you want a softer texture.

Maravilla is simply pearl pasta and isn’t too hard to find online. Sub it for pearl couscous or even fine vermicelli (although the texture will be different).

Can frozen vegetables be used in this stew?

Absolutely! Frozen vegetables are a convenient and practical option, as they are often pre-washed, pre-cut, and can be stored for longer periods without spoilage. They are a great alternative when certain fresh vegetables are out of season or unavailable.
