How to Make Vegan Maravilla Stew with Chickpeas
- Prep time: 10 minutes

Ingredients
Serves 8-10
- 10oz. (300g) Maravilla (pearl pasta)
- 14oz. (400g) jar of cooked/prepared chickpeas
- 2 large potatoes, cubed
- 2 large on-vine tomatoes, grated, skin removed
- 1 large onion, diced fine
- 6 cloves of garlic, peeled, minced
- 1 tablespoon smoked paprika
- 1 teaspoon ground cumin
- 1 teaspoon garlic powder (optional)
- ½ teaspoon white pepper
- 2 liters of vegetable stock (store-bought or homemade)
- ¼ cup extra virgin olive oil
- Handful of fresh parsley (for serving)
- 1 lemon (for serving)
Equipment needed
- 1 large 12-inch/30cm pot with deep sides (around 6 inches (15cm) is ideal)
- Sieve and ladle (for the stock)
Method
- Bring your stock and 2 liters of water to a boil, and turn on low heat when it’s ready, for use later.
- In the meantime, add oil to a large pot on medium-high and cook onions until lightly browned (5 minutes).
- Reduce heat to medium and add garlic, cook until fragrant, around 1 minute, before adding the potatoes.
- Stir well and cook for 2-3 minutes before adding the grated tomatoes. Stir through.
- Make a little well in the base of the pan and add the smoked paprika, cumin, garlic powder, white pepper, and season to taste with some salt. Mix spices with some of the cooking juices until you get a paste, then mix into the ingredients in the pan.
- Add around ¾ of the stock and cover. Simmer for 15 minutes, then add the chickpeas and simmer covered for another 5 minutes or until they soften.
- Add the remaining stock and then the maravilla. Stir well and allow to cook covered for around 10 minutes, or until you see the maravilla has expanded in size.
- Remove from heat and stir well. Allow to stand for a few minutes before serving.
- Garnish with some fresh chopped parsley and a squeeze of lemon juice.

What is Maravilla?
Maravilla is a small pearl-shaped pasta that is used in soups, stews, and broths. The pearls are made with the ingredients durum wheat and semolina. Once added to liquid, they expand substantially and help to thicken recipes, and you will only need a small amount of maravilla added to any recipe to thicken.
We used just 10oz. (300g) for this recipe and that was more than enough to make a stew that serves 8 people.
One of the most popular brands of Maravilla pasta is made by the Spanish pasta brand Gallo, but if you can’t find Maravilla in your local grocery store or online, sub it with Pearl Couscous, and it’ll help to thicken your stew and add a lovely texture.
