How to Cook Chicken Thighs in the Oven – Crispy & Juicy Baked Chicken Thighs

How to cook chicken thighs in the oven
Ingredients
- 1 kg (35oz.) chicken thighs (bone-in, skin on)
- 1-2 Tbsp Olive oil (we always use EVOO for cooking)
- 1 Tbsp Spanish La Vera smoked paprika
- 1 small white onion (or use onion powder)
- 1 tsp garlic powder
- 1 Tbsp. dried rosemary
- 1 tsp Ground Cumin
- 1 tsp ground White pepper
- Salt to taste
- Fresh parsley for garnish
- Chili flakes(optional)
Equipment
- Small Glass bowl for making the rub
- Oven-safe Baking dish
- Cooking Tongs
- Basting brush (optional)
- Meat thermometer
Instructions
- Preheat oven to 200°C/400°F
- To make the rub, combine all the dry ingredients in a small bowl and mix.
- Add a splash of olive oil to the bottom of the oven-safe dish
- Cut the onion into fine half rounds and add to the dish.
- Add the chicken thighs on top of the onions and drizzle each chicken thigh with a little oil (you use a basting brush if you prefer).
- Sprinkle the rub over the chicken thighs, ensuring they are evenly coated.
- Bake for 20-25 minutes at 200°C/400°F on the middle shelf.
- Increase temperature to 230°C/450°F and bake for 5 minutes to get an extra crispy skin.
- Remove from oven, baste with the cooking juices, and allow baked chicken thighs to rest for 5 minutes before serving.
Cooking Tips:
- We use skin-on chicken thighs for this recipe, for a healthier option, you can use skinless chicken thighs.
- Our 7 chicken thighs weighed 35 oz. (1000 grams) as they were free-range chicken. If using larger chicken thighs, allow more time for them to cook.
- Check your chicken thighs are done with a meat thermometer. Ensure they reach an internal temperature of 165 °F (73.9 °C).
