A large dish of cooked chicken thighs and roasted potatoes.

Spanish-style baked chicken thighs with potatoes is the perfect recipe for when you need to feed the tribe a healthy and nutritious meal with little effort. Succulent juicy chicken thighs are cooked together in a casserole dish with some potatoes, onion, and pepper and drizzled with plenty of tasty homemade marinade that you can whip up in seconds.

Simply dice the veg, add them to a large casserole dish (or any oven-safe dish) along with the chicken thighs, then drizzle over the marinade and bake for an hour. The result is a healthy and flavorsome meal that’s loaded with protein and high in fiber.

This chicken recipe serves 4 with no side dish required, although it can easily be scaled up or down to suit. For a vegan version, go to the poor man’s potatoes recipe

Best Chicken Thighs to Use

We opted for skinless bone-in chicken thighs today as they are healthier than skin-on chicken thighs and we wanted this to be a healthy, easy, tasty meal all in one.

Here’s a comparison of a 3.5-ounce (100-gram) serving of each:

Skinless Chicken Thighs:

  • Calories: Approximately 130-160 calories
  • Protein: Approximately 23-26 grams
  • Total Fat: Approximately 4-9 grams
  • Saturated Fat: Approximately 1-2.5 grams
  • Cholesterol: Approximately 85-90 milligrams
  • Sodium: Approximately 50-75 milligrams
  • Iron: Approximately 1-2% of the Daily Value (DV)

Skin-On Chicken Thighs:

  • Calories: Approximately 170-220 calories
  • Protein: Approximately 20-25 grams
  • Total Fat: Approximately 9-15 grams
  • Saturated Fat: Approximately 2-4.5 grams
  • Cholesterol: Approximately 90-110 milligrams
  • Sodium: Approximately 50-75 milligrams
  • Iron: Approximately 1-2% of the Daily Value (DV)

Skin-on chicken thighs generally have slightly higher calorie and fat content compared to skinless chicken thighs, primarily due to the fat found in the skin. However, both types are excellent sources of protein and provide essential nutrients like iron

If you’re looking to reduce calorie and fat intake, choose skinless chicken thighs. Removing the skin can also help reduce saturated fat content. However, many people enjoy the flavor and texture that the skin adds to the dish, so it ultimately comes down to personal preference and dietary goals. We also enjoy recipes with chicken thighs with skin on many occasions!

Want to Use Boneless Chicken Thighs or Breast Meat?

Using boneless chicken thighs

You will need to dice and then boil the potatoes for 10 minutes before putting them in the oven with everything else because the cooking time for the chicken is shorter.

Also, reduce the oven temperature to 350°F/180°C and cook for 30 minutes or until your chicken reaches an internal temperature of 165°F/74°C (you can use a Meat thermometer to check).

Using chicken breast meat

You will need to dice and then boil the potatoes for 10 minutes before putting them in the oven with everything else because the cooking time for the chicken is shorter.

For chicken breast meat, reduce the oven temperature to 350°F/180°C  and cook for 30-40 minutes depending on the thickness of the breast meat.
