Seems like everyone is talking about this viral TikTok breakfast wrap video, and for good reason. It’s basically everything you could ever want from a breakfast recipe.
There are literally hundreds of video renditions of this breakfast tortilla hack, but the basic gust of the video highlights a quick and easy way to make a tasty breakfast using a tortilla (wrap) and a few simple ingredients.
Basically, you lay out a wrap (around 10-12 inches/25-30 cm are best), then divide some toppings into 4 quarters.
Cut the wrap in a line from 6 o’clock to the center, then carefully fold the sections over until you have a quarter.
Heat in a pan for a few minutes and that’s it, you’ve made the now-famous viral TokTok tortilla fold!

Best tortillas to use
We use store-bought organic flour tortillas that are around 10 inches/25 cm, and we found this is the perfect size for a good toppings/wrap/flavor ratio. Check any decent supermarket and you’ll find plenty of different options that cater to a range of diets and tastes.
Costco sells two brands of organic flour tortillas, Fresca, and the Tortilla Land brand.
What are the healthiest tortillas?
It’s most common to find flour tortillas in local supermarkets, however, healthier options do exist. We prefer to use a brand that makes organic flour tortillas.
There are plenty of supermarkets now offering whole grain tortillas, seed tortillas, gluten-free tortillas, and even grain-free almond flour tortillas.
Are all tortillas vegan-friendly?
Nowadays, most store-bought tortillas will be vegan and usually are made with just 4 ingredients (flour, oil, salt, and water). Check the label for ingredient information before purchasing.
Vegetarian breakfast tortilla
For this recipe, we made a healthy vegetarian option and used avocado, mashed black beans, scrambled egg, and cheese. The entire recipe prep and cooking takes around 25 minutes from start to finish and tastes incredible.
Another advantage to skipping meat ingredients for breakfast is you avoid the mid-morning slump (which is what usually happens when your body is trying to process meat products).
Using beans and avocado instead offers foods that slowly release energy more evenly throughout the morning.
How to Make TikTok Breakfast Tortilla
The original video showed a simple tortilla hack that’s super easy to do at home and makes a great breakfast that you can prep, make-and-go…
Here’s how;
Step 1- Prep cold fillings
- Remove the skin and stone from an avocado and mash the avocado with a fork. Add a pinch of salt and white pepper.
- We used tinned black beans so we didn’t need to do any major prep work for those. We simply gave them a rinse, drained them, and gave them a mash.
- We used store-bought pre-grated cheese, so no prep work was required.
Step 2 – Prepare hot fillings
- In a small frying pan on medium-high heat, add a splash of olive oil and scramble 2 eggs per person. Once done, set the eggs aside.
- If you’re cooking bacon, sausages, or any other hot fillings, do it now and it’ll stay warm while finishing off the rest of the recipe.
Step 3 – Assemble wrap
This is the trick.
First, lay out a tortilla wrap in front of you, cut a small line from 6 o’clock to the center (see image attached).
Add fillings to each quarter.
- Top left – Mashed avocado
- Top right – Black beans
- Bottom left – Cheese
- Bottom right – Scrambled egg
Next, carefully fold starting with the bottom right quarter (the egg) and fold in an anticlockwise direction.
Step 4 – Saute wrap and serve
- In a clean frying pan or skillet on medium-high heat, add a splash of olive oil and add the wrap. Cook for 2-3 minutes a side, or until you see the tortilla starts to become golden and the cheese is melted.
- Serve immediately while still hot.
