This no-fuss 5-minute Spanish Tomato Salad is the perfect summer salad recipe when you’re craving flavors of the Mediterranean. Ripe juicy tomatoes are drizzled with plenty of good quality extra virgin olive oil and sprinkled with salt, ground fennel seeds, and some freshly cracked black pepper. The raw garlic adds a spicy punch and can be included or omitted to suit your taste.
This quick and easy tomato salad recipe uses just 6 easy-to-find ingredients and can be whipped up in under 5 minutes. It’s a vegan-friendly recipe that makes 4 servings as a side or tapas. How to make a 5-minute Spanish tomato salad
(serves 4 as a side salad)
Ingredients
- 3 ripe on-vine tomatoes
- 2 cloves of garlic
- 2 tablespoons of Extra Virgin Olive Oil
- ½ teaspoon of ground fennel seeds
- Pink Himalayan Salt (to taste)
- Cracked black pepper (to taste)
Equipment needed
- 1 large plate or serving platter
- 1 sharp knife and chopping board
Method
- Chop tomatoes into wedges (quarters or eighths work well) and add to a plate.
- Peel and slice 4 cloves of garlic. Loosely cut into chunks and add to the plate.
- Drizzle with good quality extra virgin olive oil.
- Sprinkle with some ground fennel seeds and season to taste with salt and cracked black pepper.

Best tomatoes to use for tomato salad
Whether you’re looking to add some color or flavor, tomatoes are an excellent addition to any salad. So much so, they stand up on their own as so many Mediterranean tomato salad recipes prove.
With so few ingredients to work with, choosing the right tomato is important.
Roma tomatoes
Use large ripe on-vine Roma tomatoes for best results. Roma tomatoes are firm and sweet and have a low moisture content, making them perfect for salads. Roma tomatoes are used extensively around the Mediterranean and pair well with other ingredients such as olive oil, feta cheese, and basil.
When choosing Roma tomatoes, they should be firm when lightly squeezed and bright red in color. If they are soft or the skin indents when squeezed, they are over-ripe and will become too mushy to use in a salad.

Heirlooms are sweet and juicy and only have a slight bitterness, making them ideal for tomato salad recipes. They can be found in a wide spectrum of colors from pale green, bright yellow, and vibrant red, all the way up to deep and dark purple hues.
Cherry tomatoes
Small, juicy, and packed full of flavor, cherry tomatoes are excellent options for salads.
