Our homemade chicken stock recipe will elevate any recipe to the next level. This recipe uses chicken pieces (leftovers, bones, etc.) plus some easy-to-find herbs and veggies to make a rich, full-flavored chicken stock.

Chicken stock is very easy to make and can be made in under an hour in one pot. Simply throw all the ingredients into the pot and simmer. This easy homemade stock recipe makes 2 liters (66 fl oz.).

What you’ll need to make this recipe

The beauty of this recipe is its simplicity, and all you’ll need is a few simple and healthy ingredients from any grocery store or fresh food market. 

You can use fresh chicken pieces, or leftovers such as bones, chicken wings, or the chicken carcass. 

Ingredients

  • 1kg / 35 oz. of chicken (pieces, carcass, drumstick, or wings)
  • 3 carrots, cut into chunks
  • 2 onions, skin on, quartered
  • 100g peas (or your choice of green veg)
  • 4 garlic cloves, crushed
  • 2 bay leaves
  • 6 peppercorns
  • 1 teaspoon of salt
  • Handful of parsley (with stalks)
  • Handful of thyme or rosemary 
  • 2 liters / 66 fl oz. of water

Equipment needed

  • 1 large pot with lid

Note: ‘Broth’ Is a term commonly used in the USA. In other parts of the world, ‘stock’ is a term more commonly used to describe a cooking liquid that is made by simmering down animal bones with vegetables in water. How to make homemade chicken stock

    • Add everything to a large pot and bring to the boil, reduce heat to low, cover, and simmer for 1 hour. 
    • Strain and preserve liquid in an airtight container.
    • Homemade stock will keep in the fridge for 1-2 days and up to 3 months in the freezer.
