- 7oz (200g) chorizo, cut into ½-inch pieces
- 1 red bell pepper, sliced
- 1 onion, sliced thin
- 1 sweet potato, cut into 1-inch chunks
- 3 tomatoes, skin removed and grated (or 400g tinned tomatoes)
- 200ml Homemade Chicken Stock
- 1 tablespoon of extra virgin olive oil
- 1 tablespoon smoked paprika
- 2-3 sprigs of fresh rosemary

Sweet potato chorizo recipe
Hey, we won’t lie, it’s not a combination you immediately think of but we’re very happy to have discovered it! Turns out the delicious smoky paprika-infused oil from the cooked chorizo pieces helps add so much flavor to the sweet potato.
Once the sweet potato and chorizo are simmered down with some herbs, spices, and some stock, you’ve got a deliciously rich, full-flavored stew that comes together in around 30 minutes.
Best chorizo to use
Use fresh Spanish chorizo sausages (known as ‘chorizo fresca’ in Spain). You’ll be able to find it at any Spanish specialty food store or a decent local butcher may also stock fresh (uncooked) chorizo.
As it’s fresh, Spanish chorio ‘fresca’ will be soft and require cooking before consumption.
Once chorizo fresca is cooked, it will release a lot of the delicious paprika-infused oil that it is made with. This oil is full of flavor and ideal for cooking your vegetables (onion, sweet potato, and bell pepper).
Herbs and spices
What really pulls all of the ingredients together is the subtle use of spices and herbs. We opted for a less is more approach when adding things to this recipe, allowing the smoky chorizo flavors to really shine through.
Smoked paprika
We used a teaspoon of smoked paprika to really accent the smokiness in this recipe. Spanish smoked paprika is super easy to find and most decent grocery stores will stock it. Many of the bigger grocery stores such as Walmart and Costco will have their own home-branded smoked paprika.
Is smoked paprika spicy?
There are two types of smoked paprika: one is simply smoked and not considered spicy, and the other is a spicy version (labeled ‘Picante’). There is also sweet paprika which can be used for this recipe if you can’t find smoked paprika.
Rosemary
We use a few fresh sprigs of rosemary in this recipe. Keeping things as simple as possible, we just added the sprigs on top of the dish and let it simmer away, no chopping required. Once finished cooking, just remove the rosemary sprigs before serving.
Can dried rosemary be used?
Sure. Add around 1 teaspoon of dried rosemary to the recipe at the same time you add the paprika.
Ingredient substitutions
- Swap out rosemary for oregano or thyme
- Swap sweet potato for pumpkin or potato
- Sweet paprika can be substituted for smoked paprika
- Add some spice with some ground chili flakes or cayenne pepper

Some more good news, this Sweet potato chorizo recipe is gluten-free! sweet potatoes are naturally gluten-free as they do not contain wheat, rye or barley. Chorizo is also (most of the time) gluten-free, although it’s always best to check the labeling of any products before purchasing.

Instructions
Step 1 - Fry Chorizo
- On medium-high heat, fry the chorizo in a large non-stick pan or skillet for 5 minutes.7 oz 200g chorizo, cut into ½-inch pieces, 1 tablespoon of extra virgin olive oil
Step 2 - Fry vegetables
- Reduce heat to medium, add the onion and fry for 3-4 minutes until the onion softens.1 onion, sliced thin
- Add the pepper, grated tomato, herbs, and spices and cook for 2-3 minutes more, stirring well.3 tomatoes, 1 tablespoon smoked paprika, 2-3 sprigs of fresh rosemary, 1 red bell pepper
Step 3 - Add stock and simmer
- Add the sweet potato and stock, give everything a gentle stir, and add the rosemary sprigs on top. Simmer covered for 15-20 minutes.1 sweet potato, 200 ml Chicken Stock
- Serve!
