Lightly toasted brown bread, a quick and easy guacamole with fresh tomato, avocado, and a little red onion, and everything combined with just a splash of extra virgin olive oil and some Jerez sherry vinegar. Top off your toast with a few fillets of mackerel and you’ve got a healthy and hassle-free breakfast ready in under 5 minutes!
This recipe is loaded with goodness and requires virtually no cooking, just toast the bread, load it with toppings, and you’re good to go!

How to Make Mackerel and Guacamole on Toast
Ingredients
- A few slices of bread (we used brown wholemeal bread)
- 1 small tin of Mackerel in olive oil
- 1-2 ripe Roma tomatoes, diced
- 1 ripe avocado, diced
- ½ red onion, diced fine
- Extra virgin olive oil (or use the Mackerel oil if you prefer)
- 1 tsp Jerez Sherry Vinegar
- Salt and Pepper (to taste)
- Fresh parsley (for garnish)
Equipment
- Oven with grill function
- Oven rack
- Wooden cutting board
- Chef knife
Step-by-Step Instructions
Toast Bread
- Lightly toast bread using a toaster or oven grill. For the oven grill, around 2 minutes, 45 seconds is plenty.
Make guacamole
- In a small bowl, add the diced red onion, avocado, and tomato.
- Add the Jerez sherry vinegar and some olive oil.
- Mix well and season to taste with a little salt and pepper.
Load up bread with toppings and serve
- Load up the bread with some of the guacamole, then top with a few small fillets of mackerel.
- Garnish with some fresh chopped parsley, and serve!
Best Mackerel to Use
We used Caballa del Sur which is Spanish for “Mackerel of the South.” But you can use any good quality canned mackerel, just ensure it has been preserved in olive oil (not sunflower oil).

What is Caballa del Sur
“Caballa del Sur” refers to a specific type of Atlantic mackerel (Scomber colias or Scomber japonicus) found in the southern waters of Spain, particularly in the Andalusia Region and Mediterranean regions.
In Spain, Caballa del Sur is prized for its firm texture and rich, oily flavor. It’s often prepared grilled, canned in olive oil, or used in traditional Andalusian dishes. Cádiz and Málaga are well-known for their high-quality Caballa del Sur, and it often carries a Protected Geographical Indication (PGI) status, ensuring its quality and origin.
Is Mackerel Healthy?
Mackerel is very healthy and is considered one of the best fish for nutrition. It is a firm staple of the Mediterranean diet and is used in Mediterranean cuisine in fresh or canned form. Here’s a few reasons why Mackerel is considered so healthy:

Things to Keep in Mind
🔸 Watch the sodium – Canned mackerel can be high in salt. Choose low-sodium options if possible.
🔸 Avoid King Mackerel – This variety has high mercury levels and should be eaten in moderation, especially for pregnant women and children.
Guacamole – Spanish Style!
We use the term ‘guacamole’ loosely and with utmost respect for the Latin American dish. For lack of a better way to describe it, our ‘Spanish style guacamole is made with similar ingredients (tomato, avocado, onion, oil, and vinegar (acid), but we prepare it slightly differently.
Instead of turning everything into a paste, we dice the ingredients and loosely toss them in a bowl with the lightest of dressing and a touch of seasoning. We have listed extra virgin olive oil for the guac, however, you could use the oil from the Mackerel if it’s good enough quality.
