1. Grilled Chicken Rice Bowl

It doesn’t get much healthier than this – grilled chicken, chickpeas, greens, seeds, nuts, and veg. You can choose which veg to add and mix it up each time you make it depending on what’s in season and your mood. This is a protein-loaded, nutrient-packed meal topped with a delicious and healthy dressing. 

It’s also ideal for meal prepping. Just make extra chicken, dressing, and rice at the time, and keep your grated and chopped veg in the fridge until you’re ready to make your bowl. I give you plenty of options to make this your own, like including chili in the dressing or cilantro. With so much variety, it’s one healthy meal you can’t get tired of.

When you’re looking for something loaded with flavor and that’s made with minimal fuss, this is always a winner. The star of this show is the sauce, which is outrageously tasty but oh-so-healthy too. When you’re really short on time, this recipe is a lifesaver. It can be whipped up in around 15 minutes from start to finish. There’s no need to marinate it, just pan-fry boneless chicken thighs with some garlic, vinegar, and water. 

The result is tender juicy chicken that’s loaded with flavor. We like to serve it on a bed of rice and drizzled with the leftover garlic-infused pan juices. It also goes great with potatoes and your favorite greens.

This is a delicious way to cook chicken breasts – marinated in a healthy Mediterranean marinade. It can be made in less than an hour from start to finish but for best results, marinate your chicken for at least a few hours. You can also marinate them in the morning so they’re ready for you to cook when you get back from work or school runs.

Depending on the weather, I like to serve the chicken with a grain like rice or quinoa, salad, or roast veg. All healthy, delicious options, which mean you can vary it each time you make it, too.

Easy Baked Chicken Thighs with Potatoes

This Spanish-style baked chicken thighs recipe with potatoes is the perfect option for when you want a healthy and nutritious meal with little effort. Succulent chicken thighs are baked in a casserole dish with some potatoes, onion, and pepper, then drizzled with plenty of tasty homemade marinade that you can whip up in seconds. 

Simply dice the veg, add them to a large oven-safe dish along with the chicken thighs, then drizzle the marinade over it and bake for an hour.
