Spanish Omelette (Tortilla Española)

Chorizo and Chickpea Stew
Sauté sliced chorizo with onions, garlic, and bell peppers. Add canned chickpeas, diced tomatoes, and a splash of broth. Simmer until heated through, and you have a flavorful and quick stew.
If you’re looking to make this recipe extra special, allow a little more time and let the ingredients simmer. The delicious paprika-infused oil will release from the sausage and infuse with other stew ingredients. Mushroom and shrimp tapas – Champiñón con Gamba
Made famous by a little restaurant nestled away in Calle de Laurel in Logroño Mushroom and Shrimp tapas is the perfect recipe when you want something tasty and quick to prepare. Ready in around 10 minutes and with just 5 simple ingredients, you really can’t go wrong!

Pan con Tomate (Spanish Tomato Bread)
Toast slices of rustic bread, rub them with garlic and then grate fresh tomatoes over the top. Drizzle with olive oil and sprinkle with salt for a delicious and easy tapas or snack. This is a classic Spanish recipe and you’ll find it served all over Spain as a quick and tasty breakfast.

Gazpacho
Gazpacho is cold tomato-based soup comes together quickly in a blender. Blend ripe tomatoes, cucumbers, bell peppers, onions, garlic, olive oil, vinegar, and bread. Chill and serve for a refreshing summer meal. Oh, and it is 100% vegan-friendly too!
Salmorejo
When the days are long and hot, there’s nothing better than preparing a batch of Salmorejo ready for a tasty and refreshing snack. Salmorejo is a cold soup that hails from the Andalusia region of Spain and is not only healthy and loaded with antioxidants but is also really satisfying on those warm summer nights when it’s too hot to cook.

Spanish Garlic Shrimp (Gambas al Ajillo)
Hands down, Gambas Al Ajillo is our favorite tapas recipe to date and we make it regularly at Spanish Radish HQ.
Sauté shrimp with olive oil, garlic, Ñora red pepper flakes until cooked. Finish with a splash of white wine and lemon juice. Serve with crusty bread for dipping and mopping up the delicious oil. Bliss!
Sautéed Chorizo with Red Wine
Slice chorizo and sauté it with red wine until the wine has reduced and forms a flavorful sauce. It’s a quick and delicious tapa.
Ensalada Rusa (Russian Salad)
A popular Spanish potato salad made with boiled potatoes, carrots, peas, tuna, hard-boiled eggs, and mayonnaise. Mix the ingredients together, and you have a cold and creamy salad ready in no time.
