- 1 lb (450g) of ripe on-vine tomatoes
- 8 oz. (220g) tinned tuna (we used Ortiz, Tuna Bonito Del Norte In Olive Oil)
- ½ white onion, sliced fine
- ¼ cup of black olives (pitted is best)
- 1 tablespoon Jerez sherry vinegar (optional)
- 4 tablespoons of extra virgin olive oil
- A pinch or two of coarse sea salt
- A pinch of cracked black pepper
