30-Second Mediterranean Fish Marinade
This is a 30-second Mediterranean fish marinade that’s perfect for fresh white fish fillets. It’s delicate enough that it lets the fish flavor shine through, which is important when you’re cooking something like fresh swordfish. You can also double the herbs if you’re preparing a plainer fish (especially from frozen) and like stronger flavors.
With just 6 key ingredients, this marinade is so easy to prepare. Because it has lemon, you only need to marinate your fillets for up to 30 minutes, but even 15 minutes is enough. Having said that, this isn’t a very lemony marinade like many. It verges on the sweet and warm side, thanks to the honey, cumin, and sweet paprika.
Depending on the time of year, serve your fish with salad, rice, potatoes, or steamed veg. It’s a very healthy way to prepare your white fish, and enjoy eating it at the same time.
¡Buen provecho!

How to Make this 30-Second Mediterranean Fish Marinade
Ingredients
For the marinade:
- 2 tbsp extra virgin olive oil
- 1 tbsp lemon juice (freshly squeezed)
- 1 tbsp honey
- ½ tsp La Dalia Spanish sweet smoked paprika
- ½ tsp dried thyme
- ½ tsp ground cumin
- Salt and pepper (to taste)
Fish suggestion:
- 2 Swordfish fillets (200g / 7oz. each)
Equipment
- Small bowl
- Basting brush or fork
- Cooking tongs
- Large plate
- Plastic food wrap
- Frying pan / skillet
Instructions
Step 1 – Make the marinade
- To a small bowl, add the olive oil, lemon juice, honey, herbs, and spices and mix until combined. Season to taste with salt and pepper.
Step 2 – Marinate fish fillets
- Drizzle marinade over the fish fillets and cover on both sides.
- Cover fish in plastic kitchen wrap and refrigerate for 15-30 minutes.
- NOTE: You can cook the fish immediately if short on time, however, for best results, we recommend marinating the fish for 15 minutes.
Step 3 – Cook fish and serve
- Cook the fish in a skillet / frying pan or on the grill for around 3-4 minutes per side.
Expert Tips
- Test the flavor of the marinade before adding it to your fish fillets. That way you can adjust it accordingly. If you’re not a fan of any of the ingredients, sub it for something different, e.g. thyme for rosemary, or cumin for garlic powder.
- If you want to add a little heat to the marinade, throw in a dash or two of cayenne pepper or white pepper.
What Are the Best Fish Fillets to Marinate?
As I mentioned, this is a fairly light and delicate marinade. It’s perfect when you want the flavor of the fish to shine through, and is ideal for grilling or pan-frying meatier white fish fillets like swordfish or hake.
It depends how you’re planning on cooking your fish, too. For example, this marinade complements cod very well, but frying cod can be tricky as it’s flakier. You can always bake your fish fillets with the marinade.
You can even use frozen fillets. Depending on where you live, a fishmonger may not be an option or fresh fish might cost a fortune. Just defrost the fish slowly in the fridge, then drain away the excess water and pat the fillets dry before marinating. Some common, affordable options are usually tilapia and halibut.

What to Serve With Your Mediterranean Marinated Fish
This is weather and preference dependent. If it’s hot, I love it served with just a plainish salad. If it’s cold, then I usually opt for potatoes or rice, and veg.
Here are some side dish ideas that work well:
- 5-Minute Spanish tomato salad – just a handful of ingredients go into this salad, including some ground fennel seeds.
- 5-Minute white bean salad – a more substantial side salad, loaded with Mediterranean flavors like roasted peppers, black olives, and parsley.
- Chickpea and caper salad – similar to above, except with chickpeas and added capers for a bit of zing.
- Patatas panaderas (oven-roasted scalloped potatoes) – a light potato dish with a hint of rosemary, vinegar, and garlic.
- Poor man’s potatoes – roasted potatoes with veg and garlic (more substantial).
- Patatas a la Importancia (potatoes in paprika and broth) – a rich potato dish that is next level comfort food.
- Mediterranean yellow rice – ready in 30 minutes, this is a healthy and delicious way to boost white rice into a special side.
Why This Fish Marinade is Healthy
All of the ingredients in this marinade are healthy and have their own special properties. They’re all used in the Mediterranean Diet, and fish is a prominent protein enjoyed across the Med too.
- Olive oil – The health benefits of olive oil have been studied endlessly, and it’s highly regarded for its antioxidants and oleic acid contents. It can help prevent or treat health issues like strokes, certain cancers, and rheumatoid arthritis.
- Lemon juice – Some of the key benefits of lemon juice are its vitamin C (good for the immune system and aids iron absorption), and citric acid (helps prevent kidney stones from forming).
- Honey – Known for its anti-inflammatory and antioxidant properties, honey makes a good sweetener alternative to refined sugar, and is often used in marinades or desserts. Honey is still a sugar though, so should be consumed in moderation.
- Paprika – Paprika also contains antioxidants as well as essential vitamins. Some of the health benefits it can provide are boosting eye health, lowering “bad” cholesterol, and improving blood sugar control.
- Thyme – One of the most common herbs in Spanish cooking and across the Med, it grows wild in many parts and is also used dried. Thyme can help lower blood pressure, ease digestion, and relieve respiratory issues.
- Cumin – One of the most common spices in Spanish cooking and many other Mediterranean countries, it can improve blood sugar control and has flavonoids which help fight free radicals in the body (helpful in preventing chronic diseases).

FAQs
Can I use this fish marinade on frozen fish?
Yes! Thaw frozen fish completely in the refrigerator and pat it dry before adding the marinade. This helps the flavors cling to the fish and prevents excess moisture from interfering with cooking.
How long should I marinate fish?
For delicate white fish, 15 minutes is usually enough. Firmer fish, such as swordfish, can handle up to 30 minutes. Because this marinade contains lemon juice, avoid marinating fish for several hours, as the acidity can change its texture. You can still enjoy all the ingredients of the marinade raw, so pour them all over when you’re finished cooking.
Can I cook marinated fish in the oven, in a pan, or on the grill?
Yes! This versatile marinade works with all three methods. Bake fish in a preheated oven, pan-fry it over medium heat, or grill it until cooked through. Keep an eye on the heat, as the honey can caramelize and burn if the surface gets too hot.
Can I substitute the honey in this fish marinade?
Yes. Maple syrup is a good alternative, while agave syrup also works well. You can omit the sweetener entirely if you prefer a more savory marinade.
What can I use instead of sweet smoked paprika?
Sweet smoked paprika gives the marinade its distinctive smoky Spanish flavor. If you don’t have any, use regular sweet paprika and add a tiny pinch of ground chipotle or another mild chili powder if you’d like a little heat.
Can I make this fish marinade without lemon juice?
Yes. Try lime juice or a small amount of sherry vinegar for a different Mediterranean-inspired flavor. If using vinegar, start with a little less and adjust to taste.
