What is Spanish Vermouth Chicken?
Spanish Vermouth Chicken is a one-pan chicken recipe made by marinating and roasting chicken in Spanish vermouth with garlic, onion, paprika, and herbs. It creates a rich Mediterranean-style sauce with citrus and spice notes.

- 3-4 bone-in, skin-on chicken quarters (or 8 chicken thighs)
- 2 Tbsp Extra Virgin Olive Oil
- 1 large onion, finely sliced
- 5 garlic cloves, sliced (or garlic powder)
- 200 ml Spanish red Vermouth
- 1 tsp Spanish La Vera Smoked Paprika
- Pinch of nutmeg
- Zest of 1 orange, and around half an orange worth of juice
- Salt and white pepper to taste

- Large skillet or frying pan with lid
- Cooking Tongs
- Wooden cutting board
- Chef knife
- Microplane or grater for zesting orange
How to Make Spanish Vermouth Chicken
Step 1: Marinate the Chicken
- Place chicken quarters into a bowl or zip bag with:
- 200 ml vermouth
- Half the garlic (or use garlic powder)
- Orange zest and some juice (we used half an orange)
- Sweet smoked paprika
- White pepper
- A pinch of nutmeg ( adds a little extra spice and layers flavor)
- Marinate for 30 minutes minimum, ideally 2–4 hours in the fridge.
- Reserve marinade juices for cooking.
Step 2: Roast / Simmer
- Return chicken to the pan skin-side up.
- Roast uncovered at 200°C / 400°F for 45 minutes until fully cooked. Use a meat thermometer to check the chicken has reached an internal temperature of 74°C / 165°F.
Step 3: Finish & Serve
- Spoon sauce over chicken and scatter with parsley.
- Serve hot.

Recipe Tips
Pat the Skin Dry
After marinating, dry the skin well so it browns properly. If you want to add a little more color once the chicken is browned, give the top of the chicken a light dusting with smoked paprika.
Use Bone-In Chicken
Chicken quarters stay juicy and flavorful. Another great option is skin-on bone-in chicken thighs. We don’t recommend using chicken breast meat or tenderloins as they dry out too much while cooking. Bone-in chicken gives the best option for flavor.
Use Good Vermouth
Choose one you’d happily drink. We love this artisanal vermouth that’s available from our local supermarket. It’s not pricey (around €3.90 a liter) and we’ve found it to be great for and afternoon vermouth, and of course, for cooking!
Want Extra Sauce?
Add another splash of stock while cooking.
Want a richer, syrup like sauce?
Add a tablespoon or two of brown sugar to the cooking liquid when you are building the sauce. Stir the sugar through until it dissolves, bring to a boil, then reduce heat and simmer it for around 3-4 minutesThe sauce will be rich, sweet, and syrupy. YUMMMM!
