When the weather starts to cool, there’s nothing quite like a hearty bowl of Creamy Chicken and Leek Stew. Tender, juicy chicken thighs are gently simmered with seasonal leeks, garlic, smoked paprika and Dijon mustard before being finished with cream for a rich, silky sauce.

This easy chicken and leek stew is the ultimate fall recipe, made in one pot, making it ideal for a comforting midweek dinner or a relaxed weekend meal. The leeks become wonderfully soft and sweet as they cook, while the smoked paprika adds a gentle warmth and beautiful color to the creamy sauce.

How to Make Creamy Chicken and Leek Stew

Ingredients

  • 2 leeks, halved and sliced
  • 2 small onions, finely sliced
  • 3-4 garlic cloves, minced
  • 100g / 3.5oz fresh spinach (optional) 
  • 2 tbsp Extra Virgin Olive Oil
  • 4 chicken thighs, bone-in, skinless
  • 300ml / 10fl oz chicken stock
  • 1 tsp smoked paprika
  • 1 tbsp Dijon mustard
  • 200ml / 6.75fl oz cream
  • Small bunch of parsley, finely chopped
  • Salt and pepper to taste

Instructions

Step 1 – Brown the chicken thighs

  • Add the olive oil to a large pan on medium-high heat. 
  • Add the chicken in the same pan and cook until slightly browned, then turn and brown the other side, around 4 minutes per side. 
  • Add a splash of oil (or chicken stock) if the chicken starts to stick to the pan. 
  • Once done, remove the chicken from the pan and set aside for use later. 

Step 2 – Saute the leeks

  • Next, we saute the leeks for around 5 minutes, stirring frequently. The leeks should become soft and transparent. 
  • Add the sliced onion and continue to saute for another 5 minutes or until the onions soften. 
  • Make a small well in the leek and onion and add the garlic along with a splash of oil and saute just until fragrant, around 1 minute.  

Step 3 – Build Sauce

  • Next, we stir in the mustard, paprika, and season to taste with salt and pepper. 
  • Add the chicken stock to the sauteed leek and onion and bring to a simmer. Cover and cook for 10 mins. The stock should reduce by around half. 
  • Add the fresh spinach and cover. Simmer for 2-3 minutes, just enough to wilt the spinach leaves. 
  • Next, add the cream and give everything a stir, then add the chicken thighs. Add a dusting of paprika over the chicken.
  • Bring everything back up to a simmer and cook uncovered for 10 minutes. 
  • Before serving, use a meat thermometer to check the chicken has reached an internal temperature of 74°C / 165°F.

Step 4 – Serve

  • We love to serve this dish alongside some mashed potatoes. Garnish with some freshly chopped parsley and serve straight from the pan while still piping hot.

Expert Tips for the Best Chicken and Leek Stew

Don’t skip browning the chicken

Taking a few minutes to properly brown the chicken thighs adds considerably more flavor to the finished dish. Don’t worry if the chicken isn’t cooked through at this stage; it will finish cooking in the sauce.

Don’t rush the leeks

Allow the leeks to soften properly before adding the stock. Gentle cooking brings out their natural sweetness and gives the stew a much better texture. If you want to go the extra mile, cook them on low with a good knob of butter to bring out the extra caramelized creaminess. 

Keep the sauce at a gentle simmer

Once the cream has been added, avoid aggressively boiling the stew. A gentle simmer will help keep the sauce smooth and prevent the chicken from becoming tough.

Check the chicken rather than relying only on time

Chicken thighs vary considerably in size. The safest way to know they are cooked is to check the thickest part with a meat thermometer. It should reach 74°C / 165°F.

Adjust the sauce before serving

If the sauce is thinner than you’d like, simmer the stew uncovered for a few additional minutes. If it becomes too thick, add a small splash of chicken stock.

What Are the Best Chicken Thighs to Use?

For this recipe, we recommend using bone-in, skinless or skin-on chicken thighs. They are particularly well suited to stews because they remain juicy during cooking and add plenty of flavor to the sauce.

You can use boneless chicken thighs if that’s what you have available. They will cook a little faster, so start checking their internal temperature earlier.

Chicken breasts can also be used, but they are leaner and can become dry if overcooked. If using chicken breast, keep a close eye on the cooking time and use a meat thermometer to avoid overcooking.

Leeks are a classic cool-season vegetable and are generally at their best during the autumn, winter and early spring months.

In Spain, the exact season varies depending on the growing region and weather, but you can commonly find good-quality leeks through the cooler months.

Look for leeks with firm, straight white and pale-green stems and fresh-looking dark-green leaves. Avoid leeks that feel soft, slimy or unusually dry.

Their mild onion-like flavor makes them particularly useful in soups, stews, and creamy sauces.

    Can I Add Other Vegetables?

    Absolutely. This is a very adaptable one-pot recipe.

    Mushrooms are particularly good with chicken and leeks, while carrots, peas, broccoli and seasonal squash can also work well. 

    If you’re adding firmer vegetables such as carrots, slice them finely, and add them earlier in the cooking process so they have enough time to become tender. More delicate vegetables, such as spinach or peas, can be added toward the end.
